Six Senses Laamu, Maldives
Six Senses Laamu’s uber-cool Chill Bar counts 100+ cocktails among its repertoire. Sink back into lounge beds perfectly positioned for sunset-gazing with a vibrant menu of signature cocktails, liqueur cocktails – even smoking cocktails. Resident mixologist Helen complements her innovative creations with fresh pickings from Laamu’s organic gardens, including fresh lemongrass, mint and fruits.
- 2 parts Arrack (a spirit distilled from coconuts)
- Dash of lemon juice
- Dash of vanilla
- 2 parts passion fruit juice
Combine Arrack, vanilla and lemon juice in a mixer and shake vigorously. Pour into a martini glass before adding the fresh passion fruit juice.
Daios Cove Luxury Resort & Villas, Crete
With three laid-back bars overlooking a private beach, the Daios Cove is a cocktail connoisseur’s paradise. The Ocean Bar has a cocktail menu to put Crete on the mixology map, with culinary-inspired recipes based on fresh ingredients and authentic flavours. There’s a selection of signatures; this one was created by bartender Telis Papadopoulos, winner of the 2009 World Class Bartender of the Year.
Toasted Coconut Colada
- 50ml rum
- 15ml amaretto
- 2 bar spoon yogurt (0% fat)
- 40ml sweetened coconut milk
- 3 dash angostura bitters
- 30ml pineapple juice
- 2 bar spoon toasted coconut
- 1cm wheel fresh pineapple
Combine ingredients well in a shaker, serve in a glass with the toasted coconut on top and the pineapple wheel to garnish.
Four Seasons at Jimbaran Bay, Bali
At the Four Seasons Jimbaran Bay, the place for dazzled taste buds is the famous Sundara restaurant, serving cocktail from 11am to 1am. The staff are trained by world-renowned mixologist Javier De Las Muelas, with an extensive menu combining complex flavours and clever preparation. Sundara lets you go further than tasting the menu – you can try your hand at making it too, with cocktail classes given by the brilliant bar staff.
Bitter Sweet Love
- 50ml vodka
- 15ml Martini Bianco
- 50ml ruby grapefruit juice
- 20ml fresh lemon juice
- 10ml sugar syrup
- 10ml pasteurised egg white
- Sprig of mint leaves, grated orange peel and icing sugar to serve
Fill a shaker with ice and add the ingredients. Shake for 6 to 8 seconds, and strain into a large glass. Top with crushed ice and garnish with a sprig of mint, grated orange and icing sugar.
Constance Belle Mare Plage, Mauritius
Constance Belle Mare’s bars provide some of the best cocktails in Mauritius. The Cocktail Bar has a fantastic signature cocktail menu year-round, plus themed specials worth booking your holiday around (a delightfully pink menu for Valentine’s – and you should have seen the pumpkin cocktails at Halloween…). This signature cocktail, designed by bar manager Guillaume, has been described as ‘sunshine in a glass’.
Constance Belle Mare Plage Secret Cocktail
- 50ml Jasmine tea infused vodka
- 40ml lemon juice
- 1 kaffir lime leaf
- 4 drops of orange water
Simply mix and serve!
Grace Santorini, Greece
The pool bar at the Grace Santorini is the go-to for cocktails – the menu bursts with bright, summery flavours that give you a real taste of the Mediterranean. Sunny terraces stretch out alongside the infinity pool offering beautiful views across Santorini’s caldera. The hotel’s signature cocktail, the Grace, was designed by world-renowned mixologist Salvatore Calabrese – refreshing, sophisticated and just a little bit different.
- 3cm lemon grass
- 50ml apple juice
- 5ml Grey Goose pear vodka
- 50ml pear puree
- 10ml lemon juice
- Dash of Monin honey syrup
- 4 or 5 mint leaves
- Sprig of mint and lemon grass to garnish
Cut the lemongrass into 4 or 5 pieces and crush in base of mixer. Add the rest of the ingredients and a handful of ice cubes, then shake vigorously for 10 seconds. Strain into a glass full of crushed ice, and add mint and lemon grass to garnish.
Columbia Beach Resort, Cyprus
The nautical-themed Eros Cocktail Bar at the Columbia Beach Resort combines a great cocktail menu with stunning sea views across Pissouri. Pick from the classics, the signatures and our favourite – sparkling cocktails. The Aperol spritzes at Eros come highly recommended by the resort’s sommelier, Marinos Demetriou, for that crisp freshness with a bit of fizz.
- 3 parts Prosecco
- 2 parts Aperol
- 1 part soda
- Orange slice to garnish
Fill a balloon glass with ice cubes, and pour the ingredients over the ice. Mix with a straw, and garnish with a slice of orange.
